How to make Saltah

  1. Prepare 500 g of lamb pieces and heat a pot over medium heat until hot.
  2. Brown the lamb in the pot, turning occasionally until all sides are nicely seared, about 6-8 minutes.
  3. Chop 150 g of onion, mince 3 garlic cloves, and prepare 200 g of diced tomatoes; add these to the pot.
  4. Sauté the onion, garlic, and tomatoes until they soften, about 5 minutes, stirring occasionally.
  5. Add 10 g of cumin, 10 g of coriander, 5 g of salt, and 5 g of black pepper to the pot; stir for 2 minutes until fragrant.
  6. Pour in 1 liter of water and bring the mixture to a boil; then reduce heat and simmer for about 60 minutes until the lamb is tender.
  7. Add 10 g of fenugreek leaves to the pot and continue to cook for another 10 minutes to combine flavors.
  8. Serve the hot saltah with pieces of bread for dipping, allowing everyone to enjoy.
