How to make Tahdig

  1. Rinse 300 g of basmati rice under cold running water until it runs clear, ensuring it’s properly cleaned.
  2. Soak the rinsed rice in a bowl of water with 1 tsp of salt for at least 30 minutes to help soften it.
  3. In a pot, bring 600 ml of water to a rolling boil, then add the soaked rice and cook for 5-7 minutes.
  4. Drain the rice using a colander and mix in 1/4 tsp of dissolved saffron in 1 tbsp of hot water for flavor.
  5. In a non-stick pot, melt 30 g of butter and add 30 ml of vegetable oil over medium heat.
  6. Layer the drained rice into the pot, forming a dome shape with the rice as you add it.
  7. Reduce the heat to low, cover the pot, and cook the rice for about 30-40 minutes until a golden crust forms.
  8. Check the crust under the rice to ensure it is crispy before serving it.”],
