Callaloo soup recipe
A creamy and flavorful soup from the Caribbean.
Ingredients
- 300 g callaloo
- 1 unit onion
- 2 unit garlic
- 1000 ml vegetable broth
- 400 ml coconut milk
- 1 tsp thyme
- 1 tsp black pepper
- 1 tsp salt
How to make Callaloo soup
- Finely chop 1 onion and 2 cloves of garlic and set aside for use later.
- In a pot, heat 30 ml of oil over medium heat until shimmering.
- Sauté the chopped onion for about 3 minutes until translucent, stirring occasionally.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Add 300 g of chopped callaloo and sauté for about 5 minutes until wilted.
- Pour in 500 ml of vegetable broth and bring to a boil over high heat.
- Once boiling, reduce the heat to low and stir in 400 ml of coconut milk, 1 teaspoon of thyme, ½ teaspoon of salt, and ¼ teaspoon of black pepper.
- Simmer for 10 minutes to allow flavors to meld, then blend until smooth using an immersion blender.
- Serve hot, garnished with a sprig of thyme if desired.
