Ingredients
- 300 g spinach
- 200 g cornmeal
- 800 ml water
- 1 unit onion
- 1 tsp salt
- 2 tbsp oil
How to make Moroho
- Chop 1 onion finely and set aside.
- In a medium pot, heat 2 tablespoons of oil over medium heat.
- Add the chopped onion to the pot and sauté until translucent, about 5 minutes.
- Add 300 g of spinach to the pot and cook until wilted, about 3 minutes, seasoning with 1 teaspoon of salt.
- In a separate pot, bring 4 cups of water to a boil over high heat.
- Gradually whisk in 200 g of cornmeal, stirring continuously to prevent lumps.
- Reduce heat to low and cook the mixture until thickened, about 10 minutes, stirring often.
- Once thickened, remove from heat and let it rest for 5 minutes before serving.
- To serve, spoon the sautéed spinach over the cornmeal porridge.
