Harira recipe
Tomato, lentil and chickpea soup to break a fast.
Ingredients
- 300 g lamb, cubed
- 240 g cooked chickpeas
- 150 g brown lentils
- 600 g ripe tomatoes
- 1 onion
- 2 celery
- 80 g vermicelli
- 1 coriander
- 1 tsp ground cinnamon
- 2 tbsp plain flour
How to make Harira
- Brown the lamb with the onion, celery and cinnamon, then add the blended tomato and cook it down.
- Add water, the lentils and the chickpeas and simmer until the lentils are soft, about forty minutes.
- Whisk the flour into a little cold water and stir it in to thicken the soup to a silky body.
- Drop in the vermicelli for the last few minutes and finish with coriander and lemon.
