How to make Harira

  1. Brown the lamb with the onion, celery and cinnamon, then add the blended tomato and cook it down.
  2. Add water, the lentils and the chickpeas and simmer until the lentils are soft, about forty minutes.
  3. Whisk the flour into a little cold water and stir it in to thicken the soup to a silky body.
  4. Drop in the vermicelli for the last few minutes and finish with coriander and lemon.
