Ají de gallina recipe
Shredded chicken in a warm yellow sauce.
Ingredients
- 500 g chicken breast
- 3 tbsp yellow chilli paste (ají amarillo)
- 3 white bread
- 200 ml evaporated milk
- 50 g walnuts
- 40 g parmesan
- 1 onion
- 3 garlic
- 2 boiled eggs
- 8 black olives
How to make Ají de gallina
- Poach the chicken, keep the broth, and shred it fine.
- Soak the bread in the evaporated milk. Fry the onion, garlic and ají paste until deep and sweet.
- Blend the fried base with the soaked bread, walnuts and parmesan into a smooth sauce, loosening with broth.
