Lomo saltado recipe
Stir-fried beef and chips, soy and chilli.
Ingredients
- 300 g beef sirloin
- 1 red onion
- 2 ripe tomatoes
- 1 yellow chilli (ají amarillo)
- 400 g potatoes
- 2 tbsp soy sauce
- 1 tbsp red wine vinegar
- 1 coriander
- 300 g white rice
How to make Lomo saltado
- Fry the chips and keep them hot. Get a wok or wide pan very hot.
- Sear the beef strips hard in batches so they colour rather than steam. Set aside.
- Fry the onion and tomato wedges quickly with the chilli, keeping them crisp.
- Return the beef, splash in the soy and vinegar and let it steam up. Fold the chips through at the very end so they stay standing. Serve with rice.
