How to make Nihari

  1. In a large pot, heat 4 tablespoons of ghee over medium heat and sauté 1 chopped onion until golden brown and fragrant.
  2. Add 1 tablespoon of minced ginger and 1 tablespoon of minced garlic; sauté for 2 minutes until fragrant and soft.
  3. Stir in 1 kg of beef shank and 2 tablespoons of nihari spice mix; brown the meat thoroughly on all sides.
  4. Pour in 3 liters of water, ensuring the meat is fully submerged, and bring to a boil.
  5. Once boiling, reduce the heat to low and cover the pot to simmer for 6 to 8 hours.
  6. Occasionally skim off excess fat that rises to the surface during cooking.
  7. Check for seasoning and adjust salt to taste; give it a gentle stir when needed.
  8. Serve hot, garnished with sliced green chili and fresh chopped cilantro.
