Muamba de galinha recipe
A flavorful chicken stew from São Tomé and Príncipe.
Ingredients
- 800 g chicken
- 1 unit onion
- 4 unit garlic
- 2 unit tomato
- 100 ml palm oil
- 1 unit green bell pepper
- 1 tsp cayenne pepper
- 1 tsp salt
- 1 tsp black pepper
- 500 ml water
How to make Muamba de galinha
- Cut 1 kg of chicken into pieces and season with 1 teaspoon of salt and 1 teaspoon of black pepper. Set aside to marinate.
- Chop 1 onion, mince 3 garlic cloves, and cut 2 tomatoes and 1 green bell pepper into pieces. Prepare any additional seasoning desired.
- In a pot over medium heat, pour in 3 tablespoons of palm oil and let it warm up.
- Add the chopped onion to the pot. Sauté for about 5 minutes until the onion is translucent and fragrant.
- Stir in the minced garlic and continue cooking for 1-2 minutes until aromatic.
- Add the seasoned chicken pieces to the pot. Cook for about 10-12 minutes, turning occasionally until browned on all sides.
- Mix in the chopped tomatoes and green bell pepper. Cook for an additional 5 minutes until softened and well combined.
- Pour in 1 liter of water and add 1 teaspoon of cayenne pepper. Stir well and bring to a simmer.
- Let the chicken stew simmer for 40 minutes, checking occasionally and stirring to prevent sticking.
- Once done, serve the chicken stew hot with rice or plantains for a complete meal.
