Ingredients
- 500 g beef
- 2 unit onion
- 4 unit garlic
- 2 unit tomato
- 500 g potatoes
- 500 ml beef stock
- 2 tbsp vegetable oil
- 1 tsp salt
- 1 tsp black pepper
How to make Umncweba
- Chop 1 onion and mince 3 cloves of garlic, prepare for cooking.
- In a pot, heat 2 tablespoons of vegetable oil over medium heat.
- Sauté the chopped onion and minced garlic until soft, for about 5 minutes.
- Add 500 g of diced beef to the pot and cook, stirring occasionally, until browned, about 5 to 7 minutes.
- Stir in 400 g of chopped tomatoes along with 500 ml of beef stock.
- Season with 1 teaspoon of salt and 1 teaspoon of black pepper, mixing well.
- Reduce heat to low, cover the pot and simmer for 60 minutes, stirring occasionally.
- Add 300 g of diced potatoes to the pot and cook for an additional 20 minutes.
- Check the potatoes for doneness; they should be fork-tender before serving.
- Serve Umncweba hot, ensuring every bowl includes generous portions of beef and potatoes.
