How to make Nyama choma

  1. In a bowl, combine 4 tablespoons of olive oil, 3 minced garlic cloves, 20 g grated ginger, 5 g salt, 3 g black pepper, and juice of 1 lemon to create a marinade.
  2. Marinate 600 g of beef steak in the marinade for at least 1 hour, allowing flavors to penetrate.
  3. Preheat the grill to medium-high heat, around 200°C (400°F), ensuring it's hot enough for searing.
  4. Place the marinated beef steak on the grill and cook for about 6-8 minutes on each side for medium-rare doneness.
  5. Flip the steak once, searing until you see nice grill marks forming.
  6. During the last 10 minutes of cooking, add sliced vegetables for grilling to the grill, cooking until tender, about 5-7 minutes.
  7. Once cooked, remove the beef from the grill and let it rest on a cutting board for 5 minutes to retain juices.
  8. Slice the beef into pieces and plate it with the grilled vegetables alongside for serving.
