How to make Zanzibar mix

  1. Peel the potatoes and cut them into small cubes, around 1 cm in size, for even cooking.
  2. Cook 250 g of chickpeas in boiling water in a pot for 20-25 minutes until they are tender to your liking.
  3. In a large pan over medium heat, sauté 1 chopped onion and 2 minced garlic cloves until golden, about 5 minutes while stirring frequently.
  4. Add the diced potatoes and cooked chickpeas to the pan, stirring to combine all ingredients well.
  5. Pour in 400 ml of coconut milk along with 2 teaspoons each of coriander and cumin powder; simmer for 15-20 minutes until the potatoes are soft.
  6. Season the mixture with salt and pepper to taste, then squeeze the juice of 1 lime into the dish before serving.
  7. Stir well to combine all flavors, and ensure everything is heated through before plating.
  8. Serve hot, garnished with fresh coriander if desired for added flavor.
