Zanzibar mix recipe
A flavorful mix of spices and textures from Zanzibar!
Ingredients
- 500 g potatoes
- 200 g chickpeas
- 400 ml coconut milk
- 1 unit onion
- 3 unit garlic
- 2 tsp coriander powder
- 2 tsp cumin powder
- 1 tsp salt
- 1 tsp pepper
- 1 unit lime
How to make Zanzibar mix
- Peel the potatoes and cut them into small cubes, around 1 cm in size, for even cooking.
- Cook 250 g of chickpeas in boiling water in a pot for 20-25 minutes until they are tender to your liking.
- In a large pan over medium heat, sauté 1 chopped onion and 2 minced garlic cloves until golden, about 5 minutes while stirring frequently.
- Add the diced potatoes and cooked chickpeas to the pan, stirring to combine all ingredients well.
- Pour in 400 ml of coconut milk along with 2 teaspoons each of coriander and cumin powder; simmer for 15-20 minutes until the potatoes are soft.
- Season the mixture with salt and pepper to taste, then squeeze the juice of 1 lime into the dish before serving.
- Stir well to combine all flavors, and ensure everything is heated through before plating.
- Serve hot, garnished with fresh coriander if desired for added flavor.
