Bún chả recipe
Charred pork in a bowl of dipping broth.
Ingredients
- 300 g pork mince
- 300 g pork belly
- 400 g rice vermicelli
- 4 tbsp fish sauce
- 2 tbsp palm sugar
- 2 limes
- 4 garlic
- 1 carrot
- 1 mixed herbs (mint, coriander, perilla)
How to make Bún chả
- Mix the mince with garlic, fish sauce and sugar and shape into small patties. Marinate the sliced belly the same way.
- Make the dipping broth: warm water, fish sauce, sugar, lime and garlic, plus quick-pickled carrot. It should taste light and balanced, not strong.
- Grill the patties and belly over high heat until charred at the edges.
- Drop the hot pork into bowls of the broth. Eat with cold vermicelli and a plate of herbs, dipping as you go.
