How to make Chikanda

  1. In a large bowl, mix 500 g of ground nuts, 200 g of cassava flour, 1 teaspoon of salt, and 2 teaspoons of baking powder until well combined.
  2. Gradually add 400 ml of water to the dry mixture, stirring constantly until a thick batter forms.
  3. Grease a baking dish with 1 tablespoon of palm oil and pour the thick mixture in, smoothing the top with a spatula.
  4. Drizzle about 3 tablespoons of palm oil on the top of the mixture for flavor enhancement.
  5. Cover the baking dish with a lid and steam for about 45 minutes, or until the chikanda is firm to touch and cooked through.
  6. After steaming, let the chikanda cool for 10 minutes before cutting into pieces.
  7. Serve the chikanda with your choice of side, ensuring it's warm.
