Coxinha recipe
Deliciously crispy chicken-filled Brazilian treats!
Ingredients
- 500 g chicken breast
- 1 onion
- 2 garlic
- 50 g butter
- 250 g flour
- 500 ml chicken broth
- 100 g bread crumbs
- 1 egg
- 500 ml oil
- 1 tsp salt
- 1 tsp black pepper
How to make Coxinha
- Boil 500 g of chicken breast with 1 onion and 2 minced garlic cloves in water until cooked, about 15-20 minutes.
- Remove the chicken and shred it into pieces.
- In a pan, melt 50 g of butter over medium heat.
- Add 1 chopped onion and sauté until soft, about 3-4 minutes.
- Stir in 250 g of flour and cook until golden, about 2 minutes.
- Gradually pour in 500 ml of chicken broth while stirring continuously.
- Continue stirring until the mixture thickens into a dough, about 5 minutes.
- Once cool, take small pieces of dough and fill each with shredded chicken, shaping them into teardrops.
- Beat 1 egg in a bowl; dip each shaped coxinha in the egg.
- Coat in 100 g of bread crumbs until well-covered.
- Fry in oil at 180°C until golden brown, about 3-5 minutes.
- Serve hot.
