Ingredients
- 400 g long-grain rice
- 400 g red beans
- 600 g chicken thighs
- 1 bell pepper
- 1 onion
- 4 cloves
- 2 tbsp olive oil
- 1 tsp cumin
- 2 leaves
- 1 tsp salt
- 1 tsp ½ teaspoon black pepper
How to make La bandera dominicana
- Rinse 400 g of long-grain rice under cold water until the water runs clear, about 1 minute.
- Chop 1 onion, 1 red bell pepper, and mince 3 garlic cloves before cooking.
- In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering, about 2 minutes.
- Sauté the chopped onion until fragrant and translucent, for about 5 minutes.
- Add the minced garlic and chopped red bell pepper; cook until softened, for about 5 minutes more.
- Introduce 600 g of chicken thighs, 1 teaspoon of cumin, 1 teaspoon of salt, and ½ teaspoon of black pepper; cook until the chicken is browned, around 8 minutes.
- Stir in the rinsed rice and 400 g of red beans, then add 2 bay leaves and 1 liter of water.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot; simmer for 20 minutes until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes, allowing flavors to meld.
- Fluff the rice with a fork before serving and discard the bay leaves.
