Koshari recipe
A hearty Egyptian mix of rice, lentils, and pasta!
Ingredients
- 200 g rice
- 150 g brown lentils
- 100 g small pasta
- 2 onions
- 4 garlic
- 400 g canned tomatoes
- 60 ml vegetable oil
- 1 tsp cumin
- 1 tsp salt
- 1 tsp pepper
How to make Koshari
- In a pot, cook 150 g of brown lentils in boiling water for 20 minutes, then drain them well.
- In a separate pot, heat 3 tablespoons of vegetable oil over medium heat.
- Sauté 1 chopped onion in the oil until it turns golden brown, about 7 minutes.
- Add 2 minced garlic cloves and 1 teaspoon of cumin, stirring for 1 minute until fragrant.
- Pour in 400 g of canned tomatoes along with 1 teaspoon of salt and 1/2 teaspoon of pepper.
- Let the mixture simmer for 10 minutes, stirring occasionally.
- Meanwhile, cook 100 g of rice and 150 g of small pasta based on package instructions, then drain both.
- In a large bowl, combine the rice, pasta, and tomato mixture, mixing until evenly distributed.
- Let the combined mixture rest for a few minutes to enhance the flavors.
- Serve warm, garnished with additional herbs if desired.
