How to make Kak-ik

  1. Chop 1 onion, 3 garlic cloves, and 300 g of tomatoes. Dice 2 potatoes and chop a handful of cilantro before starting.
  2. In a large pot, bring 2 liters of water to a boil over high heat.
  3. Add 1 whole chicken to the boiling water and cook for 30 minutes until fully cooked.
  4. Remove the chicken from the pot and let it cool slightly, then shred the meat and discard the skin and bones.
  5. Return the pot to medium heat. Stir in the chopped tomatoes and sauté for 5 minutes until softened.
  6. Add the diced onion and minced garlic to the pot. Sauté for an additional 5 minutes until the onion is translucent.
  7. Mix in 2 tablespoons of achiote paste, 1 teaspoon of oregano, and 1 teaspoon of pepper; cook for 5 more minutes until fragrant.
  8. Add the shredded chicken, diced potatoes, and chopped cilantro. Simmer for 30 minutes until the flavors meld together.
  9. Taste and adjust seasoning if necessary. Serve hot in bowls garnished with extra cilantro.
