How to make Jollof rice

  1. Rinse 400 g of long-grain rice under cold water until the water runs clear, then drain well.
  2. Blend 400 g of tomatoes, 1 chopped onion, 2 minced garlic cloves, and 1 chopped bell pepper until smooth.
  3. In a large pot, heat 3 tablespoons of vegetable oil over medium heat for 2 minutes.
  4. Sauté the blended mixture for about 10 minutes until it thickens and is fragrant.
  5. Add the rinsed rice, 800 ml of chicken broth, 2 bay leaves, 1 teaspoon of salt, and 1 teaspoon of black pepper to the pot.
  6. Stir well to combine the ingredients thoroughly before cooking.
  7. Bring the mixture to a boil over high heat, then reduce the heat to low.
  8. Cover the pot and simmer for 25-30 minutes until the rice is tender and the liquid has been absorbed.
  9. Once cooked, fluff the rice with a fork and let it rest for a few minutes before serving hot.
