How to make Tonjiru

  1. Fry the pork in sesame oil until it colours, then add the sliced daikon, carrot and burdock.
  2. Pour in the dashi and simmer until the roots are tender, about twenty minutes.
  3. Turn the heat low. Loosen the miso with a ladle of broth, then stir it back in, never let it boil after this.
  4. Finish with spring onion. Serve with rice on the side.
