Tonjiru recipe
Pork and root vegetables in cloudy miso.
Ingredients
- 250 g pork belly, thin sliced
- 300 g daikon
- 1 carrot
- 1 burdock root
- 1200 ml dashi stock
- 4 tbsp miso paste
- 2 spring onions
- 1 tbsp toasted sesame oil
How to make Tonjiru
- Fry the pork in sesame oil until it colours, then add the sliced daikon, carrot and burdock.
- Pour in the dashi and simmer until the roots are tender, about twenty minutes.
- Turn the heat low. Loosen the miso with a ladle of broth, then stir it back in, never let it boil after this.
- Finish with spring onion. Serve with rice on the side.
