How to make Jollof rice

  1. Measure 400 g of tomatoes, 1 onion, and 1 red bell pepper for blending.
  2. Blend the tomatoes, onion, and bell pepper together until smooth.
  3. Chop the remaining onion for sautéing.
  4. In a pot, heat 4 tablespoons of vegetable oil over medium heat.

  9. Cook the rice for 30-40 minutes or until it's tender and has absorbed the liquid; check periodically.
  10. Once cooked, fluff the rice gently with a fork to separate the grains.
