Hainanese chicken rice recipe
A fragrant and tender chicken dish served with rice.
Ingredients
- 1.2 whole chicken
- 50 g ginger
- 4 garlic
- 4 spring onions
- 300 g jasmine rice
- 1 chicken broth
- 60 ml soy sauce
- 2 tbsp sesame oil
- 1 cucumber
- 50 ml chili sauce
How to make Hainanese chicken rice
- Prepare the ingredients: measure 1 whole chicken, 1 piece of ginger, 4 cloves of garlic, and 2 spring onions for cooking.
- In a large pot, bring 2 liters of water to a rolling boil. Add the ginger, garlic, and chopped spring onions.
- Carefully lower the whole chicken into the boiling water, then reduce the heat to medium-low and simmer for 30-40 minutes.
- Once cooked, carefully remove the chicken and let it cool on a cutting board, reserving 1 liter of broth.
- In a separate pan, heat 1 tablespoon of sesame oil over medium heat. Add 300 g of jasmine rice and stir for 2 minutes.
- Pour in 500 ml of the reserved chicken broth, cover the pan, and cook for 15-20 minutes until the rice is fluffy.
- Once the chicken has cooled, slice it into serving pieces and prepare the plate with rice and cucumber.
- Drizzle the chicken with 2 tablespoons of soy sauce and garnish with extra chopped spring onions before serving.
