Ingredients
- 4 bread rolls
- 500 g chicken thighs
- 1 onion
- 3 garlic
- 2 tbsp curry powder
- 400 g canned tomatoes
- 200 ml coconut milk
- 30 g fresh coriander
- 1 tsp salt
- 1 tsp pepper
How to make Bunny chow
- Prepare all ingredients by chopping 1 onion, mincing 2 garlic cloves, and cutting 4 chicken thighs into bite-sized pieces.
- In a frying pan, sauté the chopped onion and minced garlic in olive oil over medium heat until soft, about 5 minutes.
- Add 500 g of chicken thighs to the pan and brown them on all sides for about 8 minutes.
- Stir in 2 tablespoons of curry powder to the browned chicken and cook for 1 minute to release the flavors.
- Add 400 g of canned tomatoes and 200 ml of coconut milk, stirring well to combine.
- Bring the mixture to a simmer and cover, cooking for 30 minutes until the chicken is tender and cooked through.
- Cut the top off 4 bread rolls and hollow them out carefully to make space for the curry.
- Spoon the aromatic chicken curry into the hollowed bread rolls.
- Garnish with freshly chopped coriander before serving.
