Käsespätzle recipe

Ingredients
- 400 g all-purpose flour
- 4 eggs
- 200 ml milk
- 1 tsp salt
- 2 onions
- 50 g butter
- 300 g grated cheese
- 1 tsp black pepper
How to make Käsespätzle
- In a bowl, combine 400 g of all-purpose flour, 4 eggs, 200 ml of milk, and 1 tsp of salt. Mix until smooth and lump-free.
- In a large pot, bring 3 liters of salted water to a boil over high heat. Once boiling, reduce the heat to a simmer.
- Using a spätzle maker or colander, drop the batter into the simmering water in small, uniform pieces.
- Cook the spätzle until they float to the surface, about 3-5 minutes. Remove with a slotted spoon and drain well.
- In a skillet over medium heat, melt 50 g of butter. Add 2 sliced onions and sauté until golden brown, about 8-10 minutes.
- In a serving dish, layer the drained spätzle with 300 g of grated cheese and the sautéed onions.
- Let the layered spätzle rest for 5 minutes to meld flavors before serving hot.
