How to make Moules-frites

  1. Clean 1 kg of mussels under cold running water, scrubbing the shells and removing beards thoroughly.
  2. Cut 800 g of potatoes into thin fries and soak them in cold water for 30 minutes to reduce starch.
  3. In a pot, melt 50 g of butter over medium heat for about 2 minutes until melted and bubbly.
  4. Add 2 minced garlic cloves, sauté for 2 minutes until fragrant but not browned.
  5. Add the cleaned mussels to the pot along with 250 ml of white wine; cover the pot tightly.
  6. Cook the mussels for about 5-7 minutes until they open, shaking the pot occasionally.
  7. While mussels are cooking, remove the potatoes from the water and drain well.
  8. In a separate pan, heat oil to 180°C and fry the potatoes for 5-6 minutes until golden and crispy.
  9. Once cooked, drain the fries on paper towels and season with salt.
  10. Serve the mussels in bowls with fries on the side, garnished with fresh parsley.
