How to make Sambaza

  1. Clean and gut 800 g of sambaza fish thoroughly under cold running water until it looks fresh.
  2. In a bowl, marinate the cleaned fish with 1 teaspoon of salt, 1/2 teaspoon of pepper, and 3 minced garlic cloves.
  3. Squeeze the juice of 1 lemon over the fish and let it marinate for 15 minutes.
  4. In a large frying pan, heat 1/2 cup of vegetable oil over medium heat until shimmering, about 5 minutes.
  5. Carefully place the marinated fish in the pan and fry for 5-7 minutes on one side.
  6. Flip the fish and fry for another 5-7 minutes until golden and crispy on both sides.
  7. Once cooked, transfer the fish to a plate and let it rest for 2 minutes before serving.
  8. Serve hot with lemon wedges on the side for squeezing.
