Ingredients
- 400 ml jasmine rice
- 300 g coconut milk
- 300 ml water
- 1 tsp salt
- 100 g fried anchovies
- 4 eggs
- 1 cucumber
- 200 g peanut sambal
How to make Nasi lemak
- Rinse 200 g of jasmine rice under running water until it runs clear, then soak it for 30 minutes.
- In a medium pot, combine the soaked rice, 400 ml of coconut milk, 300 ml of water, and 1 teaspoon of salt.
- Cook the rice on low heat for 20-25 minutes until the liquid is absorbed and the rice is tender.
- In a skillet, heat oil and fry 100 g of fried anchovies until they are crispy, about 5 minutes.
- Boil 2 eggs in water for 10 minutes, then cool and cut them in half.
- Slice half a cucumber into thin rounds for garnish.
- Place the cooked coconut rice on a plate and top with crispy anchovies, sliced eggs, and cucumber.
- Add 2 tablespoons of peanut sambal on the side for extra flavor.
