How to make Conch fritters

  1. Finely chop 300 g of conch meat, 1 onion, 1 bell pepper, and 2 cloves of garlic into small pieces.
  2. In a bowl, combine 150 g of all-purpose flour, 50 g of cornmeal, 2 teaspoons of baking powder, 1 teaspoon of cayenne pepper, 1 teaspoon of salt, and 1 teaspoon of black pepper.
  3. Add the chopped conch, onion, bell pepper, and garlic to the dry mixture, stirring until evenly distributed throughout.
  4. In a separate bowl, beat 1 egg until smooth, then mix it into the batter thoroughly.
  5. Heat 500 ml of oil in a deep pan over medium heat until it reaches 175°C (350°F).
  6. Using a spoon, carefully drop balls of the mixture into the hot oil one by one.
  7. Fry the conch fritters for 4-5 minutes until they are golden brown and crispy on all sides.
  8. Remove the fritters with a slotted spoon and drain on paper towels before serving.
