Ingredients
- 400 g cooked rice
- 400 g black beans
- 1 onion
- 1 red bell pepper
- 20 g cilantro
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
How to make Gallo pinto
- Chop 1 onion and 1 red bell pepper, then prepare the cilantro by rinsing and chopping 1/4 cup.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering, about 1-2 minutes.
- Add the chopped onion and red bell pepper to the skillet, sautéing until soft for about 5 minutes.
- Stir in 400 g of cooked rice and 400 g of black beans, mixing well to combine everything evenly.
- Season the mixture with 1 teaspoon of salt and 1 teaspoon of black pepper, and cook while stirring occasionally for 5 minutes.
- Just before serving, fold in the chopped cilantro and allow it to wilt slightly in the heat.
- Serve the Gallo Pinto warm on plates and enjoy your dish.
