Svíčková recipe
A rich and creamy Czech classic that delights the senses.
Ingredients
- 800 g beef sirloin
- 200 g carrots
- 150 g celery root
- 200 g onion
- 50 g butter
- 500 ml vegetable broth
- 200 ml heavy cream
- 2 tbsp vinegar
- 1 tbsp sugar
- 1 tsp black pepper
- 1 tsp salt
- 2 bay leaves
- 1 pinch allspice
How to make Svíčková
- Melt 50 g of butter in a large pot over medium heat until fully melted and bubbling lightly.
- Sear 1 kg of beef sirloin in the melted butter, turning occasionally until browned on all sides for about 5-7 minutes.
- Remove the beef from the pot and add 1 chopped onion, 2 chopped carrots, and 150 g of diced celery root; sauté until the vegetables are softened for about 5 minutes.
- Pour in 500 ml of vegetable broth and 100 ml of vinegar, then add 1 tablespoon of sugar, 2 bay leaves, and 5 allspice berries; bring to a boil.
- Return the beef to the pot, cover with a lid, and simmer on low heat for 1.5 hours, until the beef is tender.
- Take the beef out of the pot, then blend the sauce until smooth using an immersion blender or standard blender.
- Stir in 200 ml of heavy cream into the blended sauce until well combined and smooth.
- Slice the beef and serve on a plate topped with the smooth sauce, garnished with freshly chopped parsley.
