Skoudehkaris recipe
Savor the rich flavors of Djibouti's Skoudehkaris!
Ingredients
- 300 g basmati rice
- 600 g chicken thighs
- 1 onion
- 4 garlic
- 2 tbsp tomato paste
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp black pepper
- 1 tsp salt
- 600 ml water
How to make Skoudehkaris
- In a large pot, measure and heat 2 tablespoons of oil over medium heat until hot.
- Chop 1 onion and mince 3 garlic cloves; add them to the pot and sauté until golden brown, about 5 minutes.
- Add 600 g of chicken thighs to the pot and brown them on all sides, about 8 minutes.
- Stir in 2 tablespoons of tomato paste, 1 teaspoon each of cumin, coriander, black pepper, and salt; mix well.
- Pour in 1 liter of water, bring to a boil, then reduce heat and simmer for 30 minutes.
- Measure 300 g of basmati rice and stir it into the pot; cover and cook until tender and liquid is absorbed, around 20 minutes.
- Taste and adjust seasoning if needed before removing from heat.
- Serve the skoudehkaris hot, garnished with fresh herbs or alongside a salad.
