How to make Skoudehkaris

  1. In a large pot, measure and heat 2 tablespoons of oil over medium heat until hot.
  2. Chop 1 onion and mince 3 garlic cloves; add them to the pot and sauté until golden brown, about 5 minutes.
  3. Add 600 g of chicken thighs to the pot and brown them on all sides, about 8 minutes.
  4. Stir in 2 tablespoons of tomato paste, 1 teaspoon each of cumin, coriander, black pepper, and salt; mix well.
  5. Pour in 1 liter of water, bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Measure 300 g of basmati rice and stir it into the pot; cover and cook until tender and liquid is absorbed, around 20 minutes.
  7. Taste and adjust seasoning if needed before removing from heat.
  8. Serve the skoudehkaris hot, garnished with fresh herbs or alongside a salad.
