- 400 g callaloo leaves
- 1 onion
- 3 garlic
- 1000 ml vegetable broth
- 400 ml coconut milk
- 1 tsp thyme
- 1 tsp black pepper
- 1 tsp salt
How to make Callaloo soup
- Wash 400 g of callaloo leaves thoroughly under running water until clean and remove any tough stems.
- Chop the callaloo leaves into small pieces and set aside for later use.
- In a pot over medium heat, sauté 1 chopped onion for about 3 minutes until it becomes translucent and fragrant.
- Add 2 minced garlic cloves to the pot and continue to sauté for an additional minute to release its aroma.
- Incorporate the chopped callaloo leaves into the pot and cook for about 5 minutes until they are wilted.
- Pour 1000 ml of vegetable broth into the pot, stirring well to combine with the sautéed ingredients.
- Add 400 ml of coconut milk to the mixture and stir until fully combined.
- Season the soup with 1 tsp of thyme, 1/1 tsp of black pepper, and 1/1 tsp of salt, then cover and simmer for 15 minutes.
- Blend the mixture until smooth using an immersion blender or regular blender, ensuring no chunks remain.
- Serve the callaloo soup hot in bowls, garnished with a sprinkle of black pepper if desired.
