Zigni recipe
Spicy Eritrean stew that warms the soul!
Ingredients
- 500 g beef
- 2 onions
- 4 garlic
- 1 tbsp ginger
- 2 tbsp berbere spice
- 2 tbsp tomato paste
- 500 ml water
- 1 tsp salt
- 1 tsp pepper
- 2 tbsp oil
How to make Zigni
- Gather the ingredients: 1 kg of beef, 2 chopped onions, 4 minced garlic cloves, and 1 inch of minced ginger.
- Measure out 3 tablespoons of oil, 2 tablespoons of berbere spice, and 2 tablespoons of tomato paste before starting to cook.
- In a pot, heat 3 tablespoons of oil over medium heat until hot and shimmering.
- Add 2 chopped onions and sauté, stirring constantly until they turn golden brown, about 5-7 minutes.
- Stir in 4 minced garlic cloves and 1 inch of minced ginger, cooking for 2 minutes until they become fragrant.
- Add 1 kg of beef, searing it until browned on all sides, about 5-8 minutes, before mixing in other ingredients.
- Mix in 2 tablespoons of berbere spice and 2 tablespoons of tomato paste, cooking for 5 minutes until aromatic and well combined.
- Pour in 500 ml of water, season with 1 teaspoon of salt and 1/2 teaspoon of pepper, then simmer for 60 minutes, stirring occasionally.
