How to make Soupe de poisson

  1. Chop 1 onion and 3 cloves of garlic before starting, preparing them for sautéing.
  2. Heat 3 tablespoons of olive oil in a pot over medium heat until hot but not smoking, swirling it around to coat the base.
  3. Sauté the chopped onion and minced garlic until soft and translucent, about 5 minutes, maintaining a medium heat throughout.
  4. Add 2 diced tomatoes to the pot and cook until they break down into a sauce, about another 5 minutes, stirring occasionally.
  5. Pour in 1 liter of fish stock, bringing the mixture to a boil over high heat while stirring occasionally.
  6. Carefully add 400 g of white fish fillets into the boiling stock, along with ½ teaspoon of cayenne pepper, 1 teaspoon of salt, and ½ teaspoon of black pepper.
  7. Reduce the heat and let the soup simmer gently for about 15 minutes, allowing the fish to cook through and flavors to meld.
  8. Garnish the soup with freshly chopped parsley before serving to enhance color and flavor.
