Banku and tilapia recipe

Ingredients
- 400 g banku flour
- 800 ml water
- 4 tilapia fish
- 1 onion
- 2 tomatoes
- 1 pepper
- 1 tsp salt
- 2 tbsp oil
How to make Banku and tilapia
- In a bowl, mix 400 g of banku flour with 800 ml of water until smooth and well combined.
- Pour the mixture into a pot and heat it over medium heat, stirring continuously for 10 minutes until it thickens.
- Clean and scale 1 tilapia fish, then season it with salt, 1 chopped onion, 1 diced tomato, and 1 chopped pepper.
- In a skillet, heat 2 tablespoons of oil over medium-high heat.
- Grill or fry the fish in the hot oil for 8-10 minutes on each side until golden and cooked through.
- Once cooked, transfer the tilapia to a plate and let it rest for a few minutes.
- Serve the banku warm alongside the grilled fish on a platter for sharing.
- Garnish the tilapia with extra onions and tomatoes before serving.
