How to make Masgouf

  1. Clean the whole fish thoroughly, removing all insides and scales, then score the sides with shallow cuts.
  2. In a bowl, mix 60 ml of olive oil, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of cumin, and 1 teaspoon of paprika.
  3. Coat the fish evenly with the spice mixture, ensuring every part is well covered.
  4. Let the fish marinate at room temperature for 30 minutes to absorb the flavors.
  5. Prepare a grill or open flame, heating it until medium-high, ideal for cooking fish.
  6. Place the fish on the grill, cooking for 20-30 minutes, turning halfway through for even cooking.
  7. Monitor the fish as it cooks until it’s flaky, and the skin is nicely charred.
  8. Remove the fish from the grill and let it rest for a few minutes before serving.
  9. Serve the fish hot with lemon wedges on the side and garnish with chopped fresh parsley.
