Maqluba recipe
A flavorful upside-down rice and meat dish.
Ingredients
- 800 g chicken
- 300 g basmati rice
- 1 cauliflower
- 1 onion
- 4 tbsp vegetable oil
- 1 tsp cinnamon
- 1 tsp salt
- 1 tsp black pepper
- 600 ml water
How to make Maqluba
- Chop 1 onion finely and set aside for cooking.
- In a large pot, heat 2 tablespoons of vegetable oil over medium heat.
- Add the chopped onion and sauté until golden brown, about 5 to 7 minutes.
- Add 800 g of chicken pieces to the pot, along with 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of cinnamon.
- Cook the chicken until browned on all sides, approximately 10 minutes, stirring occasionally.
- Layer 300 g of cauliflower florets evenly on top of the browned chicken in the pot.
- Next, add 300 g of rinsed basmati rice evenly over the cauliflower.
- Pour 600 ml of water over the rice; bring to a boil over high heat.
- Once boiling, reduce heat to low, cover the pot, and let it simmer for 30 minutes.
- After 30 minutes, remove the pot from heat and let it sit covered for 10 minutes to rest the rice and chicken.
- Carefully flip the pot onto a large serving platter; let the Maqluba fall out and garnish with toasted nuts or fresh herbs before serving.
