How to make Jollof rice

  1. Begin by rinsing 400 g of long-grain rice under cold water and set aside to drain.
  2. Finely chop 1 onion and measure out 3 tablespoons of vegetable oil for cooking.
  3. In a large pot over medium heat, pour in the oil and sauté the chopped onion until translucent, about 3-4 minutes.
  4. Add 1 chopped red bell pepper and 2 minced garlic cloves; cook for 5 minutes until softened.
  5. Stir in 2 tablespoons of tomato paste, 2 bay leaves, 1 teaspoon of salt, and 1 teaspoon of black pepper; cook for another 2 minutes, stirring frequently.
  6. Add the rinsed rice to the pot along with 500 ml of chicken broth; bring mixture to a boil.
  7. Once boiling, reduce the heat to low and cover the pot with a lid; cook for 20-25 minutes until the rice absorbs all the liquid.
  8. Fluff the rice gently with a fork before serving and enjoy your Jollof rice.
