Piragi recipe
Delicious Latvian pastries filled with savory goodness.
Ingredients
- 500 g all-purpose flour
- 10 g yeast
- 250 ml milk
- 100 g butter
- 2 onions
- 300 g ground pork
- 1 tsp salt
- 0.5 tsp black pepper
- 1 egg
How to make Piragi
- Dissolve 10 g of yeast in 250 ml of warm milk in a bowl and let it sit for 10 minutes until frothy.
- In a large mixing bowl, combine 100 g of all-purpose flour with 100 g of melted butter and 1 teaspoon of salt.
- Add the yeast mixture to the flour mixture and mix it all together until a smooth dough forms.
- Knead the dough on a lightly floured surface for 5 to 7 minutes until it becomes elastic and smooth.
- Place the kneaded dough in a warm place and allow it to rise for 1 hour until doubled in size.
- Chop 1 onion and sauté it with 300 g of ground pork in a frying pan over medium heat for about 10 minutes until cooked through.
- Season the pork mixture with salt and black pepper to taste, then remove it from heat to cool.
- On a floured surface, roll out the risen dough to about 3 mm thick and cut out circles with a glass.
- Place a spoonful of the pork mixture in the center of each circle, then fold the dough over to seal.
- Preheat your oven to 180°C (350°F) while you prepare the pastries.
- Arrange the filled pastries on a baking sheet and bake for 25-30 minutes until golden brown.
- Serve the warm piragi as a delicious snack or appetizer, enjoying them fresh out of the oven.
