How to make Ravitoto

  1. Wash 500 g of cassava leaves thoroughly under running water and then chop them finely.
  2. In a pot, heat 2 tablespoons of vegetable oil over medium heat and sauté 1 chopped onion for about 3-4 minutes until golden brown.
  3. Add 2 minced garlic cloves and continue to sauté for an additional 1-2 minutes until fragrant.
  4. Add 600 g of pork shoulder cut into cubes to the pot and brown on all sides for about 5-7 minutes.
  5. Stir in the chopped cassava leaves, along with 1 teaspoon of salt and 1 teaspoon of black pepper; mix well together.
  6. Pour in 1000 ml of water into the pot and bring to a gentle simmer.
  7. Cover the pot and let it simmer for 1.5 hours until the pork is tender and the flavors meld.
  8. Serve hot with rice to enjoy the dish’s rich flavor and texture.
