Ravitoto recipe

Ingredients
- 500 g cassava leaves
- 600 g pork shoulder
- 1 onion
- 3 garlic
- 2 tbsp vegetable oil
- 1 tsp salt
- 1 tsp black pepper
- 1000 ml water
How to make Ravitoto
- Wash 500 g of cassava leaves thoroughly under running water and then chop them finely.
- In a pot, heat 2 tablespoons of vegetable oil over medium heat and sauté 1 chopped onion for about 3-4 minutes until golden brown.
- Add 2 minced garlic cloves and continue to sauté for an additional 1-2 minutes until fragrant.
- Add 600 g of pork shoulder cut into cubes to the pot and brown on all sides for about 5-7 minutes.
- Stir in the chopped cassava leaves, along with 1 teaspoon of salt and 1 teaspoon of black pepper; mix well together.
- Pour in 1000 ml of water into the pot and bring to a gentle simmer.
- Cover the pot and let it simmer for 1.5 hours until the pork is tender and the flavors meld.
- Serve hot with rice to enjoy the dish’s rich flavor and texture.
