How to make Shan noodles

  1. Soak and prepare 300 g of rice noodles according to the package instructions before starting.
  2. In a pan, heat 3 tablespoons of peanut oil over medium heat until hot but not smoking.
  3. Add 3 minced garlic cloves and sauté for about 1 minute until fragrant.
  4. Add 300 g of diced chicken to the pan and cook, stirring occasionally, until it’s no longer pink, about 5-7 minutes.
  5. Stir in 100 g of sliced carrots and 150 g of bean sprouts.
  6. Cook for an additional 3-4 minutes until the vegetables are tender and vibrant in color.
  7. Mix the cooked noodles into the chicken and vegetables, adding 2 tablespoons of soy sauce and 1 tablespoon of fish sauce.
  8. Toss everything well and garnish with 2 tablespoons of sesame seeds and chopped green onions before serving.
