Dholl puri recipe
Delicious flatbreads stuffed with spiced split peas!
Ingredients
- 200 g split peas
- 500 g all-purpose flour
- 300 ml water
- 1 tsp salt
- 1 tsp cumin powder
- 2 tbsp oil
- 1 onion
How to make Dholl puri
- Rinse 200 g of split peas under cold water and soak them for at least 2 hours in water for thorough hydration.
- In a pot, boil the soaked split peas in fresh water for approximately 30 minutes until they are soft.
- Drain the peas and mash them with 1 tsp of cumin powder and 1/2 tsp of salt until well blended and smooth.
- In a mixing bowl, combine 500 g of all-purpose flour with 300 ml of water and 1/1 tsp of salt, then knead until smooth.
- Cover the dough with a cloth and let it rest for 30 minutes at room temperature to develop the gluten.
- Divide the dough into 8 equal pieces and flatten each piece with your palm.
- Place a spoonful of the split pea mixture in the center, then fold the dough over to enclose the filling.
- Roll each filled dough ball gently into a flat round about 15 cm in diameter, being careful not to let the filling escape.
- Heat 2 tbsp of oil in a skillet over medium heat until hot, then place the flatbread in the skillet.
- Cook each flatbread for about 2-3 minutes on each side or until golden brown before removing from the skillet.
- Serve the hot dholl puri warm with curry or chutney on the side.
