Ingredients
- 400 g black beans
- 300 g cooked rice
- 1 onion
- 1 bell pepper
- 30 g cilantro
- 2 tbsp vegetable oil
- 1 tsp salt
- 1 tsp black pepper
How to make Gallo pinto
- Rinse and drain 400 g of black beans in a colander until no liquid remains.
- Finely chop 1 onion and 1 bell pepper into small pieces, setting aside for cooking.
- In a skillet, heat 2 tbsp of vegetable oil over medium heat until shimmering and hot.
- Sauté the chopped onion for about 3 minutes, until softened and translucent in color.
- Add the chopped bell pepper to the skillet, cooking for another 2 minutes until tender.
- Stir in the drained black beans, followed by 2 cups of cooked rice, ensuring everything is well mixed.
- Season with 1 tsp of salt and 1/2 tsp of black pepper, mixing thoroughly to combine flavors.
- Cook the mixture for an additional 5-10 minutes until heated through, stirring occasionally.
- Mix in 1/4 cup of chopped cilantro just before serving for a fresh flavor boost.
- Remove from heat and let rest for a few minutes before serving.
