Sopa paraguaya recipe
A cheesy cornbread delight from Paraguay!
Ingredients
- 250 g cornmeal
- 500 ml milk
- 3 eggs
- 200 g cheese
- 1 onion
- 1 tbsp baking powder
- 1 tsp salt
- 2 tbsp oil
How to make Sopa paraguaya
- Preheat your oven to 180°C (350°F) to start preparing the dish.
- In a skillet, heat 2 tablespoons of oil over medium heat and sauté 1 chopped onion until softened, about 5 minutes.
- In a bowl, combine 2 cups of cornmeal, 1 tablespoon of baking powder, and 1 teaspoon of salt, and mix together well.
- Add the sautéed onion, 1 cup of cheese, 1 cup of milk, and 2 beaten eggs to the mixture; stir until fully combined.
- Grease a baking dish with a little oil and pour the mixture into it, spreading it evenly.
- Bake for 30-40 minutes until the top is golden brown and a toothpick comes out clean.
- Remove from the oven and let the sopa paraguaya cool for a few minutes.
- Serve warm as a hearty appetizer or side dish.
