How to make Bryndzove halusky

  1. Peel 800 g of potatoes and cut them into quarters before boiling in salted water for about 20 minutes until tender.
  2. Mash the boiled potatoes until smooth and measure out 250 g for the dough.
  3. In a bowl, mix the 800 g of mashed potatoes with 200 g of all-purpose flour and 5 g of salt until a dough forms.
  4. Divide the dough into small pieces, rolling them into dumplings about the size of a golf ball.
  5. Bring a pot of water to a boil, then cook the dumplings for about 5 minutes until they float to the surface.
  6. In a frying pan, cook 150 g of chopped bacon over medium heat for 5-7 minutes until crispy, then remove from heat.
  7. On a serving plate, arrange the dumplings, sprinkle with 200 g of bryndza cheese, and top with the crispy bacon.
  8. Add a dollop of 100 g of sour cream on top and finish by sprinkling black pepper to taste.
