How to make Kapustnica

  1. Dice 1 onion and 3 cloves of garlic, and then sauté them in a pot with a bit of oil on medium heat for about 5 minutes until translucent.
  2. Add 200 g of diced smoked sausage to the pot and cook for an additional 5 minutes until browned.
  3. Stir in 400 g of sauerkraut, 3 diced potatoes, 1 tsp of caraway seeds, 2 bay leaves, and 1 tsp of smoked paprika until combined.
  4. Pour 1 liter of vegetable broth into the pot, bring it to a boil, then reduce the heat and let it simmer for 30 minutes, stirring occasionally.
  5. Taste the broth, season with black pepper, and adjust salt if needed before finishing the dish.
  6. Serve the soup hot in bowls, garnished with freshly chopped parsley.
