Kapustnica recipe
Warm up with this hearty Slovak sauerkraut soup!
Ingredients
- 400 g sauerkraut
- 200 g smoked sausage
- 300 g potatoes
- 1 onion
- 2 garlic
- 1 tsp caraway seeds
- 1 vegetable broth
- 2 bay leaves
- 1 tsp black pepper
- 1 tsp smoked paprika
- 10 g fresh parsley
How to make Kapustnica
- Dice 1 onion and 3 cloves of garlic, and then sauté them in a pot with a bit of oil on medium heat for about 5 minutes until translucent.
- Add 200 g of diced smoked sausage to the pot and cook for an additional 5 minutes until browned.
- Stir in 400 g of sauerkraut, 3 diced potatoes, 1 tsp of caraway seeds, 2 bay leaves, and 1 tsp of smoked paprika until combined.
- Pour 1 liter of vegetable broth into the pot, bring it to a boil, then reduce the heat and let it simmer for 30 minutes, stirring occasionally.
- Taste the broth, season with black pepper, and adjust salt if needed before finishing the dish.
- Serve the soup hot in bowls, garnished with freshly chopped parsley.
