Lablabi recipe
Savor the warmth of this Tunisian chickpea stew.
Ingredients
- 400 g chickpeas
- 1200 ml water
- 1 carrot
- 2 tomatoes
- 3 garlic
- 2 tsp cumin
- 2 tbsp harissa
- 4 tbsp olive oil
- 1 tsp salt
- 4 bread
How to make Lablabi
- The night before, soak 400 g of chickpeas in plenty of water, ensuring they are fully submerged, then drain and rinse them thoroughly.
- In a pot, heat 4 tbsp of olive oil over medium heat, then add 3 chopped garlic cloves and 1 diced carrot. Sauté until fragrant, about 3-5 minutes.
- Add 2 chopped tomatoes to the pot and stir for a minute, then sprinkle in 2 tsp of cumin and 2 tbsp of harissa. Mix thoroughly.
- Pour in 1 liter of water, then add the soaked chickpeas. Bring the mixture to a boil over high heat.
- Reduce the heat to low and simmer for 30 minutes, stirring occasionally, until the chickpeas are tender.
- Season with 1 tsp of salt to taste, then remove from heat and prepare to serve.
- Place pieces of crusty bread in bowls and ladle the hot chickpea soup over the bread. Enjoy.
