How to make Lablabi

  1. The night before, soak 400 g of chickpeas in plenty of water, ensuring they are fully submerged, then drain and rinse them thoroughly.
  2. In a pot, heat 4 tbsp of olive oil over medium heat, then add 3 chopped garlic cloves and 1 diced carrot. Sauté until fragrant, about 3-5 minutes.
  3. Add 2 chopped tomatoes to the pot and stir for a minute, then sprinkle in 2 tsp of cumin and 2 tbsp of harissa. Mix thoroughly.
  4. Pour in 1 liter of water, then add the soaked chickpeas. Bring the mixture to a boil over high heat.
  5. Reduce the heat to low and simmer for 30 minutes, stirring occasionally, until the chickpeas are tender.
  6. Season with 1 tsp of salt to taste, then remove from heat and prepare to serve.
  7. Place pieces of crusty bread in bowls and ladle the hot chickpea soup over the bread. Enjoy.
