Sesotho potjiekos recipe

Ingredients
- 800 g beef
- 2 onions
- 2 carrots
- 4 potatoes
- 200 g green beans
- 500 ml beef stock
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 2 leaves
How to make Sesotho potjiekos
- Chop 1 onion, 1 carrot, and 1 potato into small pieces and set aside.
- In a potjie pot, heat 2 tablespoons of olive oil over medium heat.
- Add 800 g of beef to the pot and brown it on all sides, about 10 minutes, then remove and set aside.
- Sauté the chopped onion in the pot until translucent, about 5 minutes.
- Add the chopped carrot and potato to the pot and stir to combine, cooking for another 3 minutes.
- Return the browned beef to the pot, then add 2 cups of beef stock, 2 bay leaves, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Cover the potjie, reduce heat to low, and let it simmer for 2 hours, stirring occasionally.
- After 2 hours, add 200 g of green beans and cook for another 30 minutes before serving hot.
