How to make Sesotho potjiekos

  1. Chop 1 onion, 1 carrot, and 1 potato into small pieces and set aside.
  2. In a potjie pot, heat 2 tablespoons of olive oil over medium heat.
  3. Add 800 g of beef to the pot and brown it on all sides, about 10 minutes, then remove and set aside.
  4. Sauté the chopped onion in the pot until translucent, about 5 minutes.
  5. Add the chopped carrot and potato to the pot and stir to combine, cooking for another 3 minutes.
  6. Return the browned beef to the pot, then add 2 cups of beef stock, 2 bay leaves, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
  7. Cover the potjie, reduce heat to low, and let it simmer for 2 hours, stirring occasionally.
  8. After 2 hours, add 200 g of green beans and cook for another 30 minutes before serving hot.
