How to make Pilau

  1. Chop 1 onion, mince 3 garlic cloves, and grate 20 g of ginger as your preparation steps before cooking.
  2. In a large pot, heat 3 tablespoons of vegetable oil over medium heat, around 180°C (350°F) until shimmering.
  3. Sauté the chopped onion until golden, about 5 minutes, stirring occasionally to avoid burning.
  4. Stir in the minced garlic, grated ginger, 1 cinnamon stick, 3 cardamom pods, and 5 whole cloves; sauté for 2 minutes until fragrant.
  5. Add 500 g of chicken pieces to the pot and cook until browned on all sides, about 5-7 minutes.
  6. Stir in 300 g of basmati rice into the pot, ensuring each grain is coated with the spice mixture for 2-3 minutes.
  7. Pour in 600 ml of water along with 10 g of salt, bring to a boil, then cover and reduce heat to low.
  8. Simmer for 20 minutes until rice is tender and liquid is absorbed, then remove from heat and let it sit covered for 5 minutes before serving.
